Deleting Outgoing Mail Servers In Jaguar
OSXFAQ Reader Tip By Jason Parker
Mail lets you add outgoing servers well enough but doesn't provide a way
of deleting servers you don't need. They can become annoying and
confusing. To delete them edit the com.apple.mail.plist file found in
username/Library/Preferences. Make sure you know the name of the server
you want removed. Exit (not hide) the Mail app before editing the file.
Scroll down to find the server ref.
Here is an example of a tagged server section to remove:

<key>AccountType</key>
<string>SMTPAccount</string>
<key>Hostname</key>
<string>smpt.mac.com</string>
<key>ShouldUseAuthentication</key>
<string>NO</string>
</dict>
